Reportedly, the researchers from Boston University School of Medicine (BUSM) have found that when the mushrooms were kept in the sun for around 60 minutes, the UV light was transformed into vitamin D and so people having a Vitamin D deficiency may start eating mushrooms.

Much like our skin, mushrooms transform ultraviolet light from the sun into the vitamin and continue to do so even after they have been harvested. The nutrient is essential for the immune system, strong healthy bones and teeth and the absorption of calcium.
